Calabrian pancetta tesa is a cured meat made from pork belly, characterized by its rectangular shape, alternating layers of fat and lean meat, and the use of hot Calabrian chili peppers in the spices. It is salted, washed (often with vinegar or red wine), and aged for about 30 to 70 days, giving it a distinctive flavor and a soft texture.
In this format, it is presented sliced in a convenient 60g tray in a protective atmosphere.
