It is a typical table cheese, served both as a starter or after a meal, accompanied by prized local olives.
On the nose, it offers pleasant herbaceous sensations. On the palate, it is firm and crumbles pleasantly in the mouth: it is sweet and oily, with a tart note from the arugula. The result is a pecorino with a delicate flavor.
