Fileja is a traditional Calabrian pasta made from a simple dough of durum wheat flour and water. Filej (or fileja) are made by hand-rolling the rough dough around a wooden stick or a sprig of dried broom.
It is served with fresh tomato sauce, preferably grated Pecorino del Monte Poro cheese, and a good spicy Calabrian chili pepper. Another excellent option is to flavor it with the famous N'duja di Spilinga. This artisanal product is dried at low temperatures.
