Introducing Calypso, our artisanal panettone crafted for those who love bold, enveloping flavors rich in nuance.

The soft, fragrant dough—made with a select few natural ingredients, sourdough starter, and an exceptionally long natural fermentation process—is enriched with generous chocolate chips and delicate cubes of candied pear.

The entire creation is infused with rum, lending the panettone an intense, aromatic character that enhances the sweetness of the pear and the richness of the chocolate.

To complete the experience, a luscious 70% dark chocolate glaze—intense and lingering—envelops the panettone, amplifying its character and creating a perfect balance of bitter, sweet, and aromatic notes.

Like all our panettones, Calypso is born in our small artisanal workshop, where time remains an integral part of the recipe and traditional techniques are cherished and applied with passion.

Sourdough starter, natural ingredients, and slow natural fermentation allow us to create a magnificent leavened cake with a soft texture, intense aromas, and a unique, unmistakable flavor.
