Monacale olives are a traditional Calabrian recipe, they are prepared only with olives harvested shortly before complete ripening, when they reach a purplish colour, a sweetish taste and a pulpy consistency.

The olives are cleaned and preserved in brine to eliminate acidity, after which they are processed together with oil, garlic, oregano and hot pepper. Monacale olives cannot be missing in home aperitifs with friends, they are also excellent as an ingredient in chicken and rabbit prepared in a pan.

Without dyes and without preservatives, after opening keep in the fridge.
