Granetti, which differ from frese only for their elongated shape, are a type of hard toasted bread created for the need of families to have a substitute for fresh bread to use daily. The dough is the same as the bread but the processing is a little different. The fresa, like granetto, is basically toasted bread with an elongated shape such as the long sandwich then toasted as it is put back into the oven and therefore toasted.
