Semi-aged Crotone pecorino is a typical Calabrian cheese made in the province of Crotone, made with sheep's milk. It is produced with whole sheep's milk, coming from sheep reared exclusively in the production area. Its seasoning can last up to two years.
This form has a maturation of 60 days, which gives it an intense and savory taste. It can be consumed as an appetizer, alone or with other typical products of Calabrian cuisine. It is recommended to combine it with jams, marmalades or compotes, in particular with the delicious red onion compote from Tropea I.G.P. It is eaten in small pieces or, once grated, also as an ingredient in the kitchen, as a final touch on first courses.
