To produce the fillets, the Callipo company chooses tuna of the finest quality and processed completely in Italy, in the Maierato (VV) plant, in all its phases, following the tradition that is centuries old in our Calabria.
The preparation is done by cooking the steamed tuna, the best fillets are selected one by one and are hand-infused with olive oil, following strict rules of hygiene and food safety. Then they are aged for a long time to guarantee an intense and inimitable flavor.
