The fresh Bianchetto Truffle (Tuber albidum Pico or Tuber borchii Vittad.) is harvested from January 15th to April 30th.

It has a pleasant, intense, slightly spicy and garlicky scent, ideal for those who love strong aromas in the kitchen. It is much appreciated in dishes based on butter and cheese.

The Bianchetto resembles the White Truffle but the two types of truffle differ in some essential elements. Externally their shape is very similar: irregular with protuberances that are smooth to the touch, but the color of the Bianchetto is much darker than that of the White Truffle. The color of the mature Bianchetto Truffle is dark gold, bronze and sometimes even light brown; the glebe and the ripening veins are also dark.

Its size is generally small, from that of a hazelnut to that of a chicken egg.

Where it grows

The Bianchetto Truffle grows on calcareous soils in broad-leaved and coniferous forests. Significant quantities are found in Calabria, Basilicata and Puglia.

Orders for fresh products are processed from Monday to Wednesday until 2pm. Orders received after 2pm on Wednesday will be processed on the following Monday. If you need to bring forward the shipment to Thursday, please indicate this in the notes when ordering. In this case we are not responsible for any delays by the courier.

If the truffle is purchased with any other product from our store you will always receive two shipments, one with only the fresh truffle that follows the instructions above and one for the rest of the order.
